TWiB #41 – Pumpkin Cream Cheese Brownies

This seemed like an interesting way to use up some pumpkin.  GiR thinks there’s too many things going on in this, but I like the flavor mix.  I will, however, claim that it feels more like a cake rather than brownies.  Maybe I baked it too long?

I left out the cayenne like the OP of the brownies did.  I layered my brownies as such from bottom to top:  chocolate, pumpkin, chocolate, pumpkin, cream cheese.

Hummingbird Cake from Cooking: A Commonsense Guide

Only baked for 48 min and cut into 12 pieces.

Good, but I was hoping it would taste more like pineapple. 3.5 stars out of 5.

Happy Father’s Day!

My dad is on a health kick, so I tried to come up with a healthy little dessert for him for Father’s Day. These mini tarts have about 70 calories and 5g of fat each. And you can’t go wrong with fresh fruit and homemade whipped cream.


Make cream cheese tart shells as directed.

Spoon small amount of sugar free jam into the bottom of each shell. I used strawberry jam for the strawberry tarts and either lemon curd or blackberry jam for the blueberry tarts.

Spoon fresh berries into top shells; about 4 small pieces of fruit will fit in each tart.

Top with homemade whipped cream.

I made this pumpkin cream cheese pie as part of a pi(e) date with GiR. We had cottage pie, this pie, and watched the movie Pi.
