TWiB #50 – Blueberry Coffee Cake

I needed a quick breakfast cake for a Christmas brunch and this hit the spot exactly.

I used a 9×9 square pan instead of a bundt pan. Instead of the struesel topping listed, I used the struesel from Dorie’s Allspice Crumb Muffins (pg. 16). Although instead of allspice, I used cinnamon.

Very moist and delicious. 4 stars out of 5.

This Week in Baking Week #1 – Apple Coffee Cake

For a semi New Year’s resolution, I’m going to make a new baked good every week. I’ve got so many recipes that I want to try out, so this is my chance. Each week I’m going to pick a new recipe, whether it be a cake, cookies, pie, or other dessert and try it out. I will feed it to friends and family, get their feedback, and hopefully improve my baking skills and techniques. It’ll be a great learning experience and we get to eat tasty food!

For week #1, I chose to make this apple coffee cake (sans sauce).

The ingredients are easy to pick up, the steps are easy to follow. It makes the kitchen smell wonderful! My testers (GiR and MB) gave it 3 stars out of 5. MB recommended perhaps adding more spices, such as nutmeg. GiR brought the leftovers into work the next day, and I’ve already got an order to make one! Sounds like a success to me.

Food update

I’ve made a lot of food over the past few weeks, but I forget to take pictures of it.

Blueberry almond pecan coffee cake. Made with Splenda!

Brownies shaped like Tetris pieces! =D (not made with Splenda)

I also made some mini strawberry danishes that were a big hit. Cookie-sized homemade danish pastry, with a small dollop of a cream cheese filling, and a few tiny pieces of strawberry on top. Yum! All it needed was a bit of powdered sugar glaze on top.

I tried my hand at making some sourdough bread, which turned out pretty good. Taking the baking and pastry class is making me want to experiment with new foods and try new things. This bodes well for my family and friends who get to try all my yummy stuff. =)
