TWiB #41 – Pumpkin Cream Cheese Brownies

This seemed like an interesting way to use up some pumpkin.  GiR thinks there’s too many things going on in this, but I like the flavor mix.  I will, however, claim that it feels more like a cake rather than brownies.  Maybe I baked it too long?

I left out the cayenne like the OP of the brownies did.  I layered my brownies as such from bottom to top:  chocolate, pumpkin, chocolate, pumpkin, cream cheese.

My Dorie Days

After reading so much about Dorie Greenspan’s book Baking: From My Home to Yours, I decided to pick it up from the library to try the recipes out before shelling out the cash for my own book. Here’s everything that I made in the 3 weeks or so I had the book. Needless to say, I ordered my own copy. =)

Pecan Honey Sticky Buns (pg. 51)

Absolutely fantastic. 4.5 stars out of 5.

Lemon Poppyseed Muffins (pg. 10)

4.5 stars out of 5.

Fresh Mango Bread (pg. 45)

I used craisins instead of raisins, resulting in a beautiful mango cranberry bread.

Oatmeal Breakfast Bread (pg. 44)

At the last minute, I realized I didn’t have any applesauce. I used mashed banana instead, which substituted perfectly. And again, I used craisins instead of raisins.

Honey-Nut Brownies (pg. 102)

I chose to use almonds as my nut.

Not enough of a chocolaty taste. 2.5 stars out of 5.

Great Grains Muffins

I finally used the last of my craisins in this recipe. Can you tell I got them on sale?

Food update

I’ve made a lot of food over the past few weeks, but I forget to take pictures of it.

I also made some mini strawberry danishes that were a big hit. Cookie-sized homemade danish pastry, with a small dollop of a cream cheese filling, and a few tiny pieces of strawberry on top. Yum! All it needed was a bit of powdered sugar glaze on top.

I tried my hand at making some sourdough bread, which turned out pretty good. Taking the baking and pastry class is making me want to experiment with new foods and try new things. This bodes well for my family and friends who get to try all my yummy stuff. =)
