TWiB #43 – Rye Bread

Rye bread is GiR’s favorite bread, so I knew I had to try it out. There are a lot of different recipes out there, but the one I picked seemed simple and straightforward. I thought the cocoa powder was an interesting addition, but GiR didn’t like it. Still, it was a soft bread with a nice chewy crust.

TWiB #39 – Strawberry Pecan Bread

I needed to use up a few things and I was looking for something simple, so this bread fit the bill. Since it’s a quick bread, it seemed like a good opportunity to use Splenda.

Modifications
Divided recipe in half to make 1 loaf.  Used Splenda in place of sugar.

Rating
Flavors are good, but it’s a little dry.  GiR finds the Splenda flavor to be too overwhelming.  2.5 stars out of 5.

TWiB #36 – Pita Bread

I had another free Sunday, so I whipped up some more bread.  Sadly, I shuffled the bread a bit awkwardly onto the baking sheet, so they didn’t poof up like they were supposed to.  Still tasty, though!

Not really a mod, but I chose to use honey and olive oil, when given the options.

Rating
Very moist and soft, but bland.  3.5 stars out of 5.

TWiB #33 – Cottage Dill Bread

I don’t usually bake bread, but I had a free Sunday, so it seemed like a good time to try it out. My husband GiR loves dill and suggested I try to use that in a bread. The results were fantastic!

Modifications
I used instant yeast instead of active dry. The comments also suggested that the amount of yeast was a typo, so I used 1 1/2 teaspoons instead of 1 1/2 tablespoons. I left out the onion and used dill weed instead of dill seed. I don’t have a bread machine, so I used Alton Brown’s straight dough method.

Soft, flavorful, delicious. 4.5 stars out of 5.

My Dorie Days

After reading so much about Dorie Greenspan’s book Baking: From My Home to Yours, I decided to pick it up from the library to try the recipes out before shelling out the cash for my own book. Here’s everything that I made in the 3 weeks or so I had the book. Needless to say, I ordered my own copy. =)

Pecan Honey Sticky Buns (pg. 51)

Absolutely fantastic. 4.5 stars out of 5.

Lemon Poppyseed Muffins (pg. 10)

Fresh Mango Bread (pg. 45)

Modifications
I used craisins instead of raisins, resulting in a beautiful mango cranberry bread.

Modifications
At the last minute, I realized I didn’t have any applesauce. I used mashed banana instead, which substituted perfectly. And again, I used craisins instead of raisins.
