TWiB #50 – Blueberry Coffee Cake

I needed a quick breakfast cake for a Christmas brunch and this hit the spot exactly.

Blueberry Sour Cream Coffee Cake

Modifications
I used a 9×9 square pan instead of a bundt pan. Instead of the struesel topping listed, I used the struesel from Dorie’s Allspice Crumb Muffins (pg. 16). Although instead of allspice, I used cinnamon.

Very moist and delicious. 4 stars out of 5.

TWiB #34 – Blueberry Muffins

My husband GiR and I decided to bake something together. Hijinks ensue!

Old-School Muffins from Alton Brown’s I’m Just Here for More Food

Modifications
We didn’t have any yogurt, so we pureed some cottage cheese to a similar consistency.  And of course, we chose 2 cups of blueberries as our mix-in.

Rating
Not the best muffin ever, but a solid 4 stars out of 5.

TWiB #28 – Blueberry Lemon Pavlova

I’ve never done much with meringue, so this looked like an easy recipe to try.  Plus it used up my lemon curd and some of my fresh blueberries.

Modifications
I only made a 1/3 recipe, but I still ended up with 8 palvovas.  Maybe I made mine much smaller?  Also, I chose to use cream of tartar where there was the option.

Rating
Tastes like a toasted marshmallow, but way too sweet and too tricky to make. 2.5 stars out of 5.

Happy Father’s Day!

My dad is on a health kick, so I tried to come up with a healthy little dessert for him for Father’s Day. These mini tarts have about 70 calories and 5g of fat each. And you can’t go wrong with fresh fruit and homemade whipped cream.

Directions

Make cream cheese tart shells as directed.

Spoon small amount of sugar free jam into the bottom of each shell. I used strawberry jam for the strawberry tarts and either lemon curd or blackberry jam for the blueberry tarts.

Spoon fresh berries into top shells; about 4 small pieces of fruit will fit in each tart.

Top with homemade whipped cream.

TWiB #12 – Raspberry Bars

Sorry this is so late, but I’ve been stuck in training with no internet for the past couple weeks. These bars were a big hit. The bottom crust bakes like a granola bar while the topping feels like a cobbler. It’s an interesting texture, but very good.

Modifications
Well, obviously, I used raspberries instead of blueberries. I also used more berries than the recipe called for. For the preserves, I chose a Fruit of the Forest blend from Aldi (Fit and Active brand).

Rating
4-4.5 stars out of 5. I would give this 4.25 if I could. Most people loved them, but I wasn’t that impressed.
